Matcha Green Tea Muffins

Ingredients
  

  • These delicious and healthy matcha green tea muffins are packed with muscle building protein and fat burning fiber.

Instructions
 

  • 3/4 cup Kodiak Cakes all purpose flour
  • 1 cup wheatbran (I use Bob's Red Mill)
  • 1 tbsp matcha green tea powder
  • 1/2 cup brown or white sugar
  • 1/2 cup full fat Greek yogurt (using a lower fat content will compromise the texture of the muffins)
  • 4 eggs
  • 1tsp vanilla extract
  • 1tsp salt

Notes

1. Preheat your oven to 350 degrees farenheit. Prep your muffin pan by placing muffin cups in them.
2. Separate the egg yolks from the egg whites. Put the egg whites in a big mixing bowl and use a hand mixer to whisk the egg whites into stiff peaks.
3. Add in the rest of the wet ingredients and whisk together, either continuing to use your hand mixer, or with a normal whisk.
4. Now add in all of your dry ingredients and mix together so all the ingredients are evenly incorporated.
5. Add the batter into the muffin cups (makes about 8 muffins) and bake for 22 minutes.
6. Let the muffins cool for 5-minutes and then enjoy!
Feel free to add your own frosting own top or drizzle honey over them.
