Bisogno Pasta: Gluten-Free & Vegan

What a treat I have in store for all of my readers who suffer a gluten intolerance or happen to be following a vegan diet 🙂 Today I want to introduce you to Bisogno Pasta! They are a California based brand and currently sell their products in Southern California. Luckily for all us Northern Californians, Bisogno Pasta are currently expanding to the Bay Area, woo hoo!

Bisogno Pasta: Gluten-Free & Vegan

I came across Bisogno Pasta and was instantly intrigued by them. Why? Because they are the only fresh gluten free and vegan pasta currently on the market. Their nutritional values were super impressive, boasting 20g of protein (as much as 4 ounces of chicken) and 23g of fiber (basically fulfilling how much fiber you need in a day). Their pasta is made from lentil flour and water and so absolutely no gluten, wheat, corn, rice, soy, dairy OR eggs were used at all!

I really wanted to try Bisogno Pasta because I have tried a few gluten-free pastas for fun but honestly, they were all kind of … lacking. Bisogno Pasta kindly sent me samples of their three flavors of pasta: beet, lemon parsley, and spinach. My boyfriend and I had a lot of fun thinking up some recipe’s to try out the pasta and were seriously so impressed. The texture and taste were both fantastic, and I would never had known that it was missing wheat and eggs if I had not known beforehand. I think my favorite was the spinach pasta (who doesn’t want a way to incorporate more veggies into their diet?) but my boyfriend preferred the lemon parsley. All flavors were fantastic though, and I encourage you to try them!

Spinach and lemon parsley pasta with cashew pesto and smoked salmon

Ingredients

1 serving of spinach bisogno pasta
1 serving of lemon parsley bisogno pasta
4-8 ounces of smoked salmon (I used honey smoked salmon)
Cashew pesto – I used walnuts instead of cashews in mine however because I had run out of cashews!
1/2 cup grated parmesan cheese to garnish
A few basil leaves to garnish

Serves 2 people

1. Prepare the cashew pesto first and then set aside for now.
2. Prepare the bisogno pasta according to instructions – boil in hot water for 4 minutes.
3. Serve pasta and top with a generous serving of cashew pesto, smoked salmon and parmesan cheese. Enjoy!

Beet pasta with Thai style chicken

Ingredients

1 serving of beet bisogno pasta
16 ounces of chicken
1 can of coconut milk
1 cup chicken stock
1 sliced carrot
2 cups of cauliflower
2 cloves minced garlic
1 tsp salt
1 tsp fish sauce
1tsp red chilli flakes (feel free to add more if you like spice!)
OPTIONAL – 1 cup enoki mushrooms

Thai style chicken will serve 4. Make 4 servings of bisogno pasta to use all of it or store the rest away as leftovers.

1. Prepare the thai style chicken 1 day in advance. Using a slow cooker/crockpot, put all of the ingredients (minus the bisogno pasta) into your slow cooker and set on ‘LOW’ for 7-8 hours. Keep in slow cooker on ‘WARM’ setting until you make your pasta.
2. Make bisogno pasta according to directions – boil for 4 minutes.
3. Serve pasta with 1/4 of the chicken that you made. The chicken will serve 4 people and is a great leftover meal!

I cannot waaaait until Bisogno Pasta expands to the Bay Area. When it does it is going to be a constant in my kitchen! Can’t wait to make people think they are eating normal pasta and then tell them the nutritional profile hehe.

Sunday Summary: Kayla Itsines Week 1

Hey guys!

I hope you all have had a great week. I have to say that this week was a bit of a struggle for me, mentally and physically. I had a lot of work due this week, in the form of readings and presentations, and my attitude was just all over the place. It was pretty strange, but this whole week I have just been in a really negative place, and not feeling particularly happy about my body.

I know it seems silly, and it is pretty easy to mentally beat yourself up, but sometimes it just happens you know. I just want you all to know that you are not alone, and that life is not always perfect and amazing. I try my best to live a healthy and active lifestyle and sometimes things do not always go as planned. But you know what, it is alright, and the important thing is to stay focused on the bigger picture. So what if I may have overeaten this week, there are 52 weeks in a year. So what if my body doesn’t look exactly like the perfect ideal I have in my head? Everything takes time and patience is key. I have always have insecurities over my body and sometimes it is soooo hard to not listen to the little voices in my head telling me that I am not good enough. But what has always helped me (plus yoga now too) is keeping a positive outlook on life and reminding myself that I am doing the best that I can, and reminding myself how awesome I really am.

Anyway, enough of all that. I bought the Kayla Itsines bikini body guide this week so hopefully that will help be battle my body insecurities over the next few weeks!

For those of you that do not know about Kayla, I talked about her briefly in last week’s Sunday Summary post. She is a very inspirational personal trainer that made waves in the world of social media, not only for her toned body and healthy lifestyle, but for her client transformations. She released her bikini body guide a few months ago and it is basically a complete 12 week training guide to help you achieve that bikini body look (toned abs, arms and  legs). I have already completed most of the first week (just have one more workout left to do) and so far I love it!! She gives advice on cardio, and outlines a three week plan with specific workouts to do during the week which focuses on different parts of the body. The workouts really push you to your maximum and I am really excited to see the outcome at the end of the 12 weeks.

I first heard about Nikki’s coconut butter a few months ago whilst casually surfing the ‘net, and have wanted to try it ever since. I am a huge fan of everything coconut, so I was pretty sure I would like the product. Their coconut butter is also soy free, gluten free, dairy free and egg free, making it perfect for someone with these intolerances. The hard part was actually deciding what flavor to get.

They have 5 flavors:

-Pumpkin Spiced Donut
-Macadamia Nut Cookie
-Vanilla Cake Batter
-Chocolate Hazelnut Brownie
-Honey Pecan Pie

Yeah, they all sound amazing right? After hours of arduous decision making (kidding), I finally chose to get the pumpkin spiced donut. And I am glad I did. IT IS AMAZING. The consistency is definitely not what I expected though. I was expecting a creamy and smooth product, sort of like how you would imagine peanut butter. But it is actually quite hard, although honestly that does not bother me much at all. And you could also microwave some of the butter or heat it up in a pan to make it creamier and more spreadable. I have taken to just eating it straight out of the jar with a spoon hehe, but you can use it on bread, crackers, in smoothies, and in a variety of desserts (which is something I really want to test it with!!).

As you can see it didn’t take long for me to start eating …

As with all things though, even though this is a healthy product, it doesn’t mean you can eat as much as you want of it. It is relatively high in calories and fat, so make it work for how much food/calories you need a day. Overeating on something healthy is still overeating, so be sensible. I find that eating desserts with wholesome ingredients such as Nikki’s Coconut Butter makes it easier to stop because it does not have all the same nasty chemicals and preservatives in a lot of processed and junk foods which make you crave them. The only bad thing about them is that they only currently ship within the US and to Canada, but hopefully they will be able to ship worldwide soon enough!
