Lightened Lemon Coconut Cookies for a Good Cause

The holiday season is officially upon us and although I have been keeping up with my fitness routine, I’ve been pretty lax with my eating – which I will tighten up on next week because of an exciting macro plan I am getting … details to follow, so stay tuned.

I’ve been enjoying a whole range of cookies, from chocolate chip cookies to cinnamon snickerdoodles as part of the Great Food Blogger Cookie Swap! This happens everywhere and basically involves sending and receiving cookies to food bloggers across the nation, all for a great cause. To participate, you donate a few dollars which go towards the charity Cookies for Cancer. I thought that this was such a fun initiative and a wonderful way to meet new bloggers, eat yummy cookies and help a good cause. The cookie swap is sponsored by OXO, Dixie Crystals and Land O Lakes Butter – OXO and Dixie Crystals were kind enough to send over some measuring cups and a silicon mat!

Baked Apple with Healthy Peanut Butter Chocolate Sauce

Now that winter is almost here, my cravings for chocolate and warm foods are slowly creeping back. Apart from a few foods, I feel as if my cravings are very seasonal (is anyone else like that)? Salt Lake City can get really, really cold and so I am pretty sure my chocolate cravings are going to go through the roof soon. As such, I was really excited to try out Peanut Butter & Co’s new Mighty Nut, which is a powdered peanut butter. I am absolutely obsessed with Peanut Butter & Co’s delicious peanut butters (particularly the dark chocolate one hehe) so I thought it was really cool that they came out with their first powdered peanut butter.

The End of Summer Smoothie Bowl

Although I know it’s September, I was still in such a summery mood until literally 2 days ago. I threw on my usual top and shorts and headed out of the door to my car … only to be caught completely off guard by how cold I was!! The sun was shining but the air was distinctly colder. I don’t know why it caught me off guard as I did – perhaps I am trying to be willfully ignorant of the fact that fall and winter are fast approaching, with this year’s winter predicted to be cold and miserable.

I realized that soon I would be craving warm foods again like soups, pho and oatmeal bowls, and that I needed to make a smoothie bowl ASAP before the it started to sound unappealing. Hence the creation of this lovely and berry filled summer smoothie bowl! It’s really a mix of everything – bananas for sweetness; cherries, strawberries and raspberries for that low(er) sugar berry goodness and beautiful color. I recently switched to having cashew milk because I find it is much creamier and pleasant tasting that your standard almond milk. I prefer to have a dairy-free milk in my smoothies to keep the overall caloric content lower. I was also sent a few samples of Kura Lifestyle’s Sweet Mint and Berries, which is a healthy and tasty addition to this smoothie! It is composed of super greens, camu camu and eleuthro root so it really adds in a superfood punch to the smoothie.   Continue Reading…
