Ahhh, Valentine’s Day; you either love it orrrr you hate it. I happen to quite like it, but the fact that I have a boyfriend and have had the same (awesome) one for the past 5 years may have helped with that šŸ™‚

Unlike other special days though, when one thinks of Valentine’s Day, you tend to think of two things: the color red and chocolate. These two factors directly influenced what I made for you all today. Which is …… Valentine’s Day Raspberries Dipped in Dark Chocolate!!

Okay okay, I know they are not completely guilt free, but hey. Gotta live a little once in a while. Plus, raspberries are high in fiber and low in calories, whilst dark chocolate (when eaten sparingly, not every day people!) allows our bodies a greater capacity to absorb antioxidants found in chocolate, whereas the milk in normal milk chocolate actually interferes with our bodies absorption of antioxidants from chocolate. I added in cacao as well because that has also been shown to have a high amount of antioxidants. Reality check though people, eating mass amounts of dark chocolates will not necessarily ward off disease .. it will more likely make you gain lots of weight, so be sensible and eat it in moderation pleeeease šŸ™‚

Alright, so let’s get down to making this stuff! You will need the following:

Raspberries Dipped in Dark Chocolate

A perfect Valentine's Day Treat!

Ingredients
  

  • 1 bar of unsweetened dark chocolate
  • 1 bar of dark chocolate or cacao
  • 1 6 ox box of raspberries

Instructions
 

  • Step 1: Start boiling a pan of water (fill your pot about 1/4 to half way full) with boiling water. Get two bowls out. Fill one bowl with your raspberries and then put them aside as you will come back to the bowls once you have melted your chocolate.
  • Step 2. Once you have your water boiling, quickly turn down the temperature of the flame to low. Too high of a heat will cause your chocolate to melt. Get a big metal bowl, or a bowl that fits easily on top of your pot and is heat resistant. Break up the bar into small pieces and slowly add them into the big metal bowl (it will not melt well if you just chuck the bar in).
  • Step 3: Merrily stir the chocolate slowly until it melts. it really does not take long, it took me a grand total of 3 or 4 minutes.
  • Step 4: Mmmm, the best part. Get a towel or something to grab a hold of the bowl with and then scrape out the chocolate into your bowl (that I told you to get in step 1, remember). Then, get your skewer (thank you Alyssa!) or fork, whatever, and pierce one of the raspberries and simply … dip into the bowl of hot chocolate!

And there you have it, the finished product!! If you find that you would like it sweeter than this, feel free to add some honey, stevia or brown sugar and let me know how that makes it taste. If you have celiac’s disease use pure unsweetened chocolate and pure cacao (mine is 75% so not pure). If you want it completely sugar-free  .. I am afraid that will not happen, because fruits have naturally occurring sugars in them.

Calories: 1222 (as you can see it is NOT low calorie, so eat sparingly)

I know these numbers seem daunting, and I could’ve chosen not to include them. But you know what? I do not want you to be ignorant. I hate how people have gotten the notion in their head that healthy automatically means that you can eat as much as you want … NO. No foods should ever be abused in this way (except perhaps celery). Eat too much of anything and you will gain weight, although the quality of the foods you eat will certainly make a difference. I have said this a lot: eating 500 calories of grilled chicken and quinoa is so much better for you than eating 500 calories of ice-cream and pizza. Okay, rant over guys, sorry!!! Love you really, I just want you to be aware šŸ™‚

I am really excited about this post because I believe this post will touch on a crucial (and perhaps slightly controversial) topic which most people take for granted. And what is that topic?

People’s global obsession with looks.

Everyone around the world is obsessed with certain aspects of superficiality in some way or another. In Western society, women want to have tanned skin and a tight and toned body. In Asian society, there is a slight difference, instead of being tanned, women want to have pale skin and also be slim, although instead of being toned they tend to strive for a skinnier and almost fragile look. I am not quite as certain about men although it seems to be universal that men want to look strong and muscular.

Now, I do not think there is anything wrong with having a particular image to aspire too, but I do have a problem when people do crazy things to get there. For instance, a good friend in Thailand who is currently working to get her PhD told me that in order to achieve the pale skin so lusted after by Thai women, some inject a substance called Glutathione into their skin!! I read up on glutathione and found out it also comes in pill form. Glutathione is NOT a safe product and has been labelled as illegal by the FDA (Food and Drug administration) as it is believed to cause serious problems such as kidney failure, blood poisoning, and in worst case scenarios toxic epidermal necrolysis (which causes large parts of the skin to fall off)!!!!

In the US, an equivalent would be fat loss pills and tanning booths. Tanning, in a tanning booth and outdoors alike, exposes your skin to harmful UV-A and UV-B rays which can damage the skin and lead to cancer. While I am a fan of sitting in the sun, I always slather on masses of suncream and make sure not to stay out for hours on end like some people do. Adverts for fat loss pill adverts are everywhere and most are not regulated by the FDA. And many use false claims to make you by them, including using photo’s of slim women and claiming their fat loss pill helped them achieve that body. The latest craze I have seen sweeping instagram is that of ‘tea detoxes’. I think the word detox is so loosely used, and has become very associated with weight and fat loss. Detoxes are not meant for weight loss, they are meant to ‘rid the body of toxic or unhealthy substances.’ And quite frankly, our own bodies do a fine job of that, as long as you are not abusing your very own personal detoxifier: the liver. I am not a fan of companies touting tea detoxes, mainly because of the ridiculous advertising and claims they use to lure women into buying their products, such as giving them a thigh gap or making them lose 10 pounds ‘fast.’ I have even seen a few that give meal plans along with their detoxes and quite frankly the calorie allowances for them are verrrry low, so of course you will lose weight … at first.

Ugh. Be good to your bodies everyone, there is no need to go to such extraordinary lengths to achieve what you see as the ‘beauty ideal.’ And I am not saying I am immune from this, quite the opposite in fact! I used to be obsessed with getting a thigh gap, and just being thinner quite frankly. It took me a long, long time to stop judging my body by these silly standards and even to this day I have my own insecurities about my body and looks. But I just keep reminding myself that I am trying to be the best that I can be, and that I am also trying to be the healthiest and fittest I can be šŸ™‚

Coconut Whipped Cream Recipe

I am so excited to share this weeks edition of Friday Fare with you and teach you all how to make Coconut Whipped Cream!! My post on ‘How to Kick your Sweet Tooth‘ got a huge amount of hits, so I am excited to share this healthy dessert that is sweet, delicious, and not something to feel bad about eating. Again, it is all about balance so don’t go nuts and eat the whole bowl! But if you do …. hey, it won’t be that bad šŸ˜‰ This coconut whipped cream recipe was taught to me by my boyfriends aunt, who happens to be sugar-free and gluten-free. It took me a while to understand how to make it, what to make it with, but I finally cracked it! It took me a while because you need to specifically get coconut cream, plus you need to chill it overnight.

Here are the ingredients.

As I previously said, you need Coconut Cream (NOT coconut milk, or light coconut cream, you need the hard full fat stuff), liquid stevia, and vanilla essence. I want to add that it is really worth it to buy a more expensive vanilla essence and liquid stevia as they really make a difference to the taste of the coconut whipped cream. Optional ingredients are unsweetened cocoa powder (I used this as the coconut taste was too strong for my liking), or another flavoring. You will also need an electric hand mixer. These are very cheap, I got mine at Target for only $6! It is not the best, but it does the job (a little bit more slowly though).

1. This first step is CRUCIAL. You must refrigerate your can of coconut cream overnight so that it stiffens up. This is what it should look like when you scoop it out of a can (if it looks more solid that is fine too).

2. Once your coconut cream has been chilled overnight, open it up and scoop out the contents into a big bowl. make sure there is no liquid remaining because then this recipe will not work.

3. Start whisking away with your hand mixer for about 3-5 minutes until it takes on a thicker and more whipped consistency

4. Add a teaspoon of vanilla essence and 10 drops of liquid stevia. Continue whisking for another minute or so. Continually taste it and adjust it to how sweet you want it.

Ta-da! And there you have it! A delicious and easy way to make a healthy whipped cream šŸ™‚ As you can see in the photo below, I added 2 tablespoons of unsweetened cocoa because the coconut taste was a little too strong.
