The new, and final, season of Game of Thrones is airing tonight and I am beyond excited! I am a massive Game of Thrones fan and honestly can’t believe season 1 came out 9 years ago. As such, I was thinking about what I’d be eating whilst I watched the premiere of the final episode and a light bulb went off — cheesy baked eggplant and zucchini fritters! With a twist, of course.

For those of you who do not know who Leah is, you may know her sister, Kayla Itsines. Leah is an accomplished woman in her own right – she is a personal trainer and she has a massive Instagram following. I’ve followed Leah for over a year and I’ve always appreciated how funny and down to earth she seems. I especially appreciate her love for real and good food! As much as I like healthified recipes, some people just go too far. I like to make and eat healthier recipes that everyone can enjoy and Leah gets that. Her e-cookbook isn’t a ‘diet’ book. It is full of flavorful meals with healthy ingredients that combine to make a flavor bomb in your mouth. My husband and I have greatly enjoyed trying out her recipes and literally every recipe I have tried so far has been fantastic.
