Now, get a bowl and add your Monkfruit sugar into it. Add 1/2 cup to 1 cup of butterfly tea. You do not want to make the sugar too liquid-y - there should be about 1 tbsp of water in the bowl spare.
You will want to melt your white chocolate chips over a double boiler. Heat up water in a small pot (water should not exceed the halfway point of your pot) and place a heatproof bowl on top. Add your white chocolate chips into the bowl and gently stir with a spatula until smooth. Let the chocolate cool for 1 - 3 minutes.
Now, one strawberry at a time, gently dip it into the white chocolate. When taking it out of the chocolate mixture, twist it and ensure there is no more dripping chocolate. Gently dip it into your blue monkfruit sugar mixture.
Repeat until all of your strawberries are coated. Place them on parchment paper and let them harden (10 - 20 minutes).
