While winter wasn’t too bad this year, it still felt as if it lasted forever and I am so happy that the weather has finally started to warm up. Now it actually feels like the start of summer! As the seasons change, so does my appetite–winter calls for heavier comfort foods while summer calls for light salads and fresh fruit smoothies.

I’m celebrating the start of summer with this lovely and light, yet health-packed, shrimp salad with a creamy strawberry mint dressing … and a very special ingredient 🙂

Let me start off by saying that I have been obsessed with making baked zucchini fritters lately. I first started making them after seeing both Kayla Itsines’ recipe and Whitney’s (from LiveandDiet.com) take on zucchini fritters.

The baked zucchini fritter recipe I am sharing with you today has been inspired by these two ladies, with my own twist on it. Instead of using coconut flour or whole-wheat flour, and instead of frying them, I used almond flour (making these fritters gluten-free friendly) and I baked them. However, if you do not have celiac’s disease, you can use Kodiak Cakes all purpose flour to kick the protein up a notch.

To me, watermelons are the epitome of summer–they’re refreshing, healthy and oh, so tasty. I’ve noticed that my local grocery store has been selling mini watermelons and it makes me so excited. Watermelon is one of my very favorite fruits – not only is it delicious, it’s versatile and can be used to make a variety of yummy, tasty yet easy snacks.
