Merry Christmas eve, my friends! I cannot believe another year is coming to a close, and what a year it has been. Personally, and professionally, 2018 was an amazing year for me. Inevitably, as the holidays approach and the days wind down, an irresistible urge to bake and create comes over me (and particularly for banana bread!). I’m not sure if it’s because of the extra time on my hands or the urge to create something new to take into the new year with me, but whatever it is, I’m appreciative of it.

A report from Time Magazine stated that only 9.3% of Americans are meeting the standard for eating vegetables. Sounds crazy, right? How hard can it be to get in 3 servings of vegetables? Well, think about it. Do you know what counts as a serving of vegetables? According to the US Department of Agriculture, you need to consumer 1 cup of raw or cooked vegetables, or 2 cups of raw, leafy greens. They do consider 1 cup of vegetable juice as 1 serving too but it’s preferable to eat your vegetables whole to benefit from the fiber.
