Happy 4th of July weekend to all of my wonderful readers in the US! I hope you all had a great weekend and got to do something fun and spend time with the ones that meant the most to you. I had a fantastic weekend; I was lucky enough to get Friday off and so my husband and I did a few errands. We are looking for a new apartment (I think we found the one!) and went to test out a car to lease.
Raw Strawberry Cheesecake
On Friday, I made this gorgeous raw strawberry cheesecake! I had been eyeing this recipe from DashBody for ages, and I decided I might as well make it to avoid eating anything naughty over the weekend. It was not hard to make, but it did involve a fair amount of time. You had to soak the cashews for several hours, freeze the crust for an hour and finally freeze the actual cheesecake to help it set. Like I said, it wasn’t hard at all (you just blend the ingredients together, no baking involved) but you should plan ahead so that you know exactly how long it will take you to make it.
