For this fairly new American who became a citizen last year, July 4th holds a special place in my heart. It was the first holiday I celebrated as an “American,” and one where I appreciate the meaning behind the celebration.
While July 4th celebrations may be different this year, there’s no reason why we shouldn’t celebrate with good food. I am beyond excited to share my fun and patriotic healthy white chocolate dipped strawberries which are low carb, low sugar and high in fiber. Yet full of flavor!!
Making White Chocolate Dipped Strawberries Low Carb
My go to (read obsession) low carb white chocolate chips are from ChocZero. I’m no stranger to using ChocZero products because their focus is on making low carb treats. I am absolutely obsessed with their white chocolate chips because not only are they low in carbohydrates, they are high in fiber and low in sugar!
As such, they are perfect for me because I follow the F-Factor lifestyle which promotes a high-fiber diet. Furthermore, their chocolate don’t cause a sugar and energy crash like normal chocolates do. And I actually do feel full and satisfied when eating them. ChocZero’s white chocolate chips melt surprisingly well (I do recommend melting via double boiler and not microwaving them however) and work perfectly for this recipe.
How to Make Naturally Blue Monkfruit Sugar
Ahhh, when I thought of this idea, it made me SO VERY EXCITED to make this recipe! I use butterfly pea flowers to make tea and other treats and the liquid produced from steeping butterfly pea flowers is a rich, beautiful blue color. It makes an easy and natural dye.
Pair the naturally blue tea with monkfruit sugar (which is 0 calories and 0g of carbohydrates if you count net carbs using the F-Factor method). I like monkfruit sugar a lot because it doesn’t have a funny aftertaste like many sweeteners do.
I’m still fiddling around with the right amounts for this blue monkfruit sugar recipe so do bear with me. Just know that you need to use enough butterfly pea tea to coat the sugar but you don’t want to use too much and create a liquidy substance. You still want granules.
Recipe: White Chocolate Dipped Strawberries
First, prepare your butterfly pea tea. I like to do this the night before . You can find out how to make your own here: https://honestlyfitness.com/overnight-oats-with-butterfly-pea-flower/
Now, get a bowl and add your Monkfruit sugar into it. Add 1/2 cup to 1 cup of butterfly tea. You do not want to make the sugar too liquid-y - there should be about 1 tbsp of water in the bowl spare.
You will want to melt your white chocolate chips over a double boiler. Heat up water in a small pot (water should not exceed the halfway point of your pot) and place a heatproof bowl on top. Add your white chocolate chips into the bowl and gently stir with a spatula until smooth. Let the chocolate cool for 1 - 3 minutes.
Now, one strawberry at a time, gently dip it into the white chocolate. When taking it out of the chocolate mixture, twist it and ensure there is no more dripping chocolate. Gently dip it into your blue monkfruit sugar mixture.
Repeat until all of your strawberries are coated. Place them on parchment paper and let them harden (10 - 20 minutes).
Eat and enjoy!

While my healthy white chocolate dipped strawberries made a delicious dessert, you can’t just have dessert for July 4th! Here are some other fun meal and drink ideas to pair with your tasty low carb 4th of July treat.
