White Chocolate Peanut Butter Cups (Low Carb)

After seeing a huge number of peanut butter cup photos on Instagram, I couldn’t help but make my own. My absolute favorite treat are Reese’s peanut butter cups but eating them everyday is no bueno. Not about eating that much sugar and carbohydrates on a daily basis, no matter how delicious.

Enter my healthier white peanut butter cups that have no added sugar and are low in carbs! They’re still very much a treat but at least you can eat them knowing you won’t have a sugar crash later.

What Makes These White Chocolate Peanut Butter Cups Healthier?

You’ll notice that most chocolate peanut butter cups are made with lots of sugar and fat. They are oh so tasty but oh so bad for trying to maintain a healthy weight (if consumed too much, once in a while is fine).

First, to reduce the sugar content, I opted for Choc Zero’s white chocolate chips. They are sweetened with monkfruit which is a no calories sugar substitute. I also used a no sugar added peanut butter.

And that’s literally it guys! These are truly no muss, no fuss white chocolate peanut butter cups that have no added sugar, healthy fats from the peanut butter, and are low carb and keto friendly as well.

 1 cup Choc Zero White Chocolate Chips
 4 tbsp Peanut ButterYou can use chocolate peanut butter as well

First, let's get a small sauce pot and set it to low to medium heat.

Let's put our 1 cup of Choc Zero white chocolate chips into the pot. You can use a double boiler too. Gently stir and let melt for about 3-5 minutes or until done. Let the mixture cool for 10 minutes before going to step 3.

Grab mini or normal sized muffin cups. Double them up and then carefully distribute your melted white chocolate so it fills up half of your muffin cup.

Place your peanut butter on top of the white chocolate layer. You can do more than 1tbsp if you wish.

Place in the freezer for an hour and then transfer to the fridge to cool for another hour.

Eat and enjoy!

Alright friends, this whole recipe comes out to about 77g of carbohydrates and 60 grams of fiber. Per serving, that’s only 3.4g net carbs! Please be aware that this could change depending on the type of peanut butter you use (particularly if you use peanut butter). If you have more, or less than five peanut butter cups, that will also alter the above nutritional statistics.

As always, be mindful of how many sweet treats you have, as you should never be gorging yourself or treating them as a “free food.” But be heartened at the fact that these are better for you treats that are super simple and easy to make.
