High Protein Matcha Green Tea Muffins

Oh baby, I’m so excited to be sharing this matcha green tea muffin recipe with you today. It’s no secret that I’m absolutely obsessed with matcha. From cashew milk matcha lattes to matcha green smoothies, I’ve had a long love affair with matcha. Recently, I learned about Kodiak Cakes new all-purpose flour (which is higher in protein than regular flour) and it seemed like the perfect opportunity to experiment with making a baked matcha product. 

Why am I obsessed with matcha?

Good question – there’s a whole myriad of reasons to explain my obsession with matcha. Not only do I think it has a unique and bold flavor, it’s absolutely packed full of health benefits. Matcha green tea contains naturally occurring antioxidants (read more about the science behind that here) which lead to increased energy levels, fat oxidation and has been shown to help regulate blood glucose levels as well. What makes matcha more powerful than just regular old green tea is the fact that matcha contains nutrients from the entire tea leaf.

What I’m trying to say here is that not only can matcha increase your energy levels, in a nice steady way which doesn’t result in a wild caffeine crash, it also increases your antioxidant intake and could potentially aid in your fat loss efforts. Pretty sweet, am I right?

What Sets These Matcha Green Tea Muffins Apart

In homage (lol) to my love for matcha, muffins were a must. I’d avoided making them in the past because I wasn’t too sure how I’d make a healthier version without severely altering the taste. Luckily for me, Kodiak Cakes recently announced a new product – an all purpose flour that was higher in protein and fiber than most supermarket all purpose flour brands. Yay! This really excited me because now I could up the protein levels of the muffins without altering the taste.

During my experimentation phase, I also knew that I wanted a muffin with a higher fiber count as well. I’ve recently adopted the principles of the F-Factor diet (blog post to come on that…) which basically espouses a diet high in fiber. It took me a couple of tries but eventually I got the recipe down, and had some friends taste it to verify that the muffins were actually tasty and I wasn’t just deluding myself.

So without further ado, here is the recipe for my matcha green tea muffins which are packed with muscle building protein and fat burning fiber!

Recipe: Matcha Green Tea Muffins

Matcha Green Tea Muffins

Ingredients
  

  • These delicious and healthy matcha green tea muffins are packed with muscle building protein and fat burning fiber.

Instructions
 

  • 3/4 cup Kodiak Cakes all purpose flour
  • 1 cup wheatbran (I use Bob's Red Mill)
  • 1 tbsp matcha green tea powder
  • 1/2 cup brown or white sugar
  • 1/2 cup full fat Greek yogurt (using a lower fat content will compromise the texture of the muffins)
  • 4 eggs
  • 1tsp vanilla extract
  • 1tsp salt

Notes

1. Preheat your oven to 350 degrees farenheit. Prep your muffin pan by placing muffin cups in them.
2. Separate the egg yolks from the egg whites. Put the egg whites in a big mixing bowl and use a hand mixer to whisk the egg whites into stiff peaks.
3. Add in the rest of the wet ingredients and whisk together, either continuing to use your hand mixer, or with a normal whisk.
4. Now add in all of your dry ingredients and mix together so all the ingredients are evenly incorporated.
5. Add the batter into the muffin cups (makes about 8 muffins) and bake for 22 minutes.
6. Let the muffins cool for 5-minutes and then enjoy!
Feel free to add your own frosting own top or drizzle honey over them.
These matcha green tea muffins are honestly so easy to make and I cannot wait for you to try them. Yes, they are still a treat (I will never compromise flavor just to make something slightly lower in calories) but they’re a much healthier sweet treat than your average green tea muffin from Starbucks or elsewhere.     I am addicted to matcha! Usually I’m drinking matcha lattes, but baking with matcha is wonderful too! These muffins look incredible. I’ve only tried the Kodiak Cakes pancake mix a few times but I love it! Super fluffy and delicious!
