A few days ago, my husband bought some butterfly pea flowers on a whim. I was actually surprised that we hadn’t bought any sooner because I am obsessed with all things floral – rose, hibiscus, lavender, you name it. Plus, I am half-Thai and butterfly pea flower drinks and desserts are common in Thailand.
After my husband strained some flowers to make a beautifully colored tea out of it, I decided to play around with the rest. Hence, how my overnight oats with butterfly pea flower recipe came to be.
What Are Overnight Oats?
Overnight oats refer to the process of soaking oats, overnight, in milk. It’s a simple and easy no cook solution which creates a deliciously creamy and indulgent tasting breakfast. I like to add in chia seeds as well because I like the texture it adds and it ups the fiber content of my overnight oats.
I absolutely love how easy overnight oats are to make and how versatile they are. You can use any type of milk (I normally use almond milk) and mix in any and all toppings the next day. They’ve been an absolute lifesaver for days where I am either running late for work, as I can grab them and go, or days where I can’t really be bothered to cook anything.
What Are Butterfly Pea Flowers?
Great question! Butterfly pea flowers are a plant common in South-East Asia, in countries like Thailand and Malaysia, that have spiked in popularity in recent years. Butterfly pea flowers can either be steeped in water, or ground into a powder, to create a beautiful blue color. It’s a great way to naturally dye foods and I was first introduced to butterfly pea flowers in tea form in Thailand.
If you’ve used your butterfly pea flowers to make a liquid or tea, and then add an acid to it, like lemon or lime juice for example, it turns the liquid from a blue to a purple color!
While many claim that butterfly pea flower holds a myriad of health benefits, there simply isn’t enough research yet to substantiate this. That being said, we may discover more as more studies are conducted, and there’s nothing stopping me drinking it!
How to Make Overnight Oats With Butterfly Pea Flowers
1. First, brew your butterfly pea tea.
2. Simply find a large jug, add your dried butterfly pea flowers to it, and add hot water.
3. Let the tea steep for at least an hour before using it. Feel free to add sweetener to it if you wish.
1. Grab a mason jar or a weck jar.
2. Add all of your ingredients to the jar, except for the butterfly pea tea, and mix well.
3. Let it settle for a minute or too and simply drizzle the tea into the jar. It will settle at the bottom, providing a layered effect.
4. Put the jar in the fridge overnight (at least 12-hours).
5. Add in desired toppings and enjoy!

Topping Ideas For Overnight Oats
The potential for toppings for your overnight oats is absolutely endless! Here are some of my favorites to consider:
- Any fruits (think raspberries, blueberries, mangoes, sliced bananas)
- Nuts (almonds, pistachios, walnuts)
- Lily’s Chocolate Chips
- Pumpkin Seeds
- Hemp Seeds
- Cinnamon
- Peanut Butter
- Coconut Flakes
- Matcha powder (not a topping, I know, but great to mix in)
