Mother’s Day is almost here and I am sure it will be quite unique for many of you. Some of you may be virtually connecting whilst the rest of you will be at home.
I’m fairly certain that most of you will be opting to cook for mom this year and I think my healthy chocolate rose pudding is the perfect choice. It’s easy to make, tastes indulgent yet healthy and won’t leave mom feeling stuffed and bloated!
How to Make a Healthier Chocolate Pudding
My chocolate rose pudding has a secret ingredient that makes it healthy and retains the creaminess of a normal chocolate pudding. It’s … avocado!
I know, I know. It sounds strange but hear me out. Avocado is rich in healthy fats and has a creamy texture. It’s also full of fiber! When blended, you can successfully cover up the taste of the avocado and end up with a creamy, rich pudding like texture.
Making a Rose Layer
As you can see, the top layer of this pudding is the avocado chocolate layer. The bottom layer is a delicious combination of rose water and basil seeds.
I only came across basil seeds recently (I buy the ZenBasil ones off of Amazon) and I’ve been so obsessed with them. They’re similar to chia seeds in that they swell up with any liquid added to them, making them ideal for puddings. They actually soak up liquids much faster than chia seeds which is nice if you’d like a treat ASAP rather than waiting overnight. They also have a ton of fiber – 7g of fiber per 1 tbsp.
To make this rose layer, you simply soak basil seeds in rosewater. You can buy rosewater (usually easier to find in Asian supermarkets) or make your own by steeping edible rosebuds in hot water.
Chocolate Rose Pudding Recipe
Without further ado, here is the recipe for my healthy chocolate rose pudding made with basil seeds!
First, grab a mason or weck jar. We will be making the rose basil seed layer first.
Combine 1/4 cup rosewater with 1-2 tbsp ZenBasil. Let the basil seeds soak up the rosewater (15-30 minutes).
Now, make your healthy chocolate pudding layer. Simply blend in a food processor the avocado, cocoa powder, almond milk, syrup and vanilla extract.
Scoop pudding on top of rose basil seed layer.
Garnish with strawberries if you wish and enjoy!

That’s it, it’s a really easy recipe! And there are only 4g net carbs in this recipe and over 47g of fiber from the ChocZero caramel syrup. It’s truly a super food meal in itself. With any foods, and despite it’s amazing nutritional stats, no food is free and limit yourself to one pudding a day. A treat is still a treat after all!
