High Fiber Healthy Blondie Recipe

You know what I’ve been craving recently when I haven’t been hit with a chocolate craving (which is rare)? Blondies. If you haven’t heard of blondies, they are like the lesser known, yet just as amazing, cousin of the brownie (if you are craving brownies though, be sure to try this recipe out).

Often overlooked due to their lack of chocolate, they deliver a flavor that is just as delicious. I set out to create a healthy blondie recipe that is easy, tasty and high in fiber for all of my F-Factor approved friends.

What Made Me Post These Healthy Blondies?

As I mentioned, blondies are similar to brownies but don’t have chocolate. Instead, blondies achieve their rich, delicious taste from vanilla and brown sugar. My first introduction to the blondie was via Kodiak Cakes. They came out with a blondie mix that is far healthier than your normal kind.

I’m literally obsessed with it but it’s still higher in calories and carbs than I’d like (read, I can’t eat them every single night) which sparked the idea to create a lower carb, high fiber version.

And do you know what else they are? They are also gluten-free and dairy-free which makes it perfect for all my friends who can’t eat gluten and dairy products.

Honestly, I don’t normally post too many healthier versions of baked good because baking is truly a science. In cooking, you don’t always need to use the exact amount a recipe calls for and you can easily substitute things in or out. With baking however, you need to follow the recipe to a tee or you end up with a completely different product to what was promised.

It makes me a little nervous because it normally means you have to test things again and again until they turn out right. Luckily, I’m pretty careful with really analyzing the ratios of flours, other dry ingredients and wet ingredients so I got lucky and got a great product the first time round – yay 🙂

What Makes The Blondies Lower in Carbs And High In Fiber?

Traditionally, blondies will use butter and brown sugar as the main drivers of the flavor. Now, there’s nothing wrong with these two ingredients, but they aren’t great at helping someone who is on a weight loss journey or is looking to maintain their weight.

To create a rich, brown sugar-esque flavor, I used Choc Zero’s caramel syrup, F-Factor 20/20 vanilla protein powder and some vanilla extract. In place of butter, I used higher fat flours (almond flour, flaxseed meal and coconut flour) and plenty of liquid ingredients to keep the blondies moist.

Both the F-Factor 20/20 vanilla protein powder and the Choc Zero caramel syrup are a dream for baking. Neither give off a nasty artificial sugar aftertaste. I can’t speak for the Choc Zero syrup quite yet but whenever I’ve used F-Factor protein powder when baking, it’s been a great supplement to any flours I’ve added. I’m quite impressed that the Choc Zero syrup held it’s flavor so well.

What I normally find with low-carb/low-sugar syrups is that the taste almost completely goes away after it’s been baked so you end up with a pretty bland, unflavorful product. Yuck. But not Choc Zero so far!

As for the flours, almond flour and coconut flour are both lower in carbs than traditional all-purpose flour. The fun thing about coconut flour is that it’s fairly high in fiber as well. I don’t normally bake with coconut flour because it is a little finicky and is quite drying, but given it’s great nutritional qualities, I decided to just go for it.

Healthy Blondie High Fiber Recipe

Because I am a self-professed chocoholic, you will notice that I added some ChocZero dark chocolate chips which are sweetened with monkfruit to keep theblondies lower in calories and carbs. You can absolutely take them out if you want a more traditional blownie. Ugh, I just can’t get over the way they melt in your mouth.

Dry Ingredients
 ½ cup Almond Flour
 ¼ cup Coconut Flour
 2 tbsp Flaxseed Meal
 2 Scoops of F-Factor 20/20 Vanilla Protein Powder
 1 tsp Baking Powder
 ¼ tsp Salt
Wet Ingredients
 1 Mashed Banana
 ¼ cup ChocZero Caramel or Maple Syrup
 ¼ cup Vanilla Almond Milk, Unsweetened
 ½ cup Egg Whites
 1 tsp Vanilla Extract
Optional
 ¼ cup ChocZero Chocolate Chips

Preheat your oven to 350 degrees farenheit.

In a mixing bowl, whisk your wet ingredients together first.

Next, add your dry ingredients. Mix well until you get a smooth consistency.

Fold in your chocolate chips if you're using them.

Add the mix to a brownie pan or another square baking pan.

Bake for 30-minutes or until a knife comes out clean from the middle.

Let it cool for 30-minutes and enjoy!

High Fiber Healthy Blondies

 I can’t wait for you to try my healthy blondies. This whole recipe has 169 carbs and 118 fiber. It makes approximately 9-10 servings, so that’s about 18.7 carbs and 13 fiber per serving bringing you to a grand total of 6 net carbs!

They are so filling, so one serving will really go a long way. And be sure to drink lots and lots of water because all the fiber in this recipe will make you thirsty!
