Since starting my blog in 2014, I’ve amassed quite a wide array of recipes, which I am proud of. As you know, my goal is to provide healthy meals, or healthier versions of my favorite meals, to make healthy eating fun and easy. I was talking to a friend the other day who is gluten-free and it made me realize that I’ve actually created a lot of gluten-free recipes – almost as if by accident! As such, I decided to do a roundup of my gluten-free recipes, and lay them in a whole day format for you.

Gluten-free breakfast recipes
Both of these gluten-free breakfast dishes pack tons of veggies in. It’s such a great feeling to know that you’ve eaten several servings of vegetables in your first meal of the day. They both are packed with fiber (which helps maintain your weight) and protein! Both take less than 20-minutes to make.
Gluten-free lunch recipes
Here are two tasty salads and one hot meal. The kitchen sink cauliflower rice is incredibly versatile–I’ve used lots of different veggies (think kimchi, brussels sprouts, etc) and it always tastes good. Plus, it makes for an incredible meal prep dish! These salads are great year round although I enjoy the lox salad most during the winter and the shrimp salad most when the weather is warm. Enjoy these three gluten-free lunch options!
Gluten-free dinner recipes
I feel like there’s something for everyone with these four gluten-free dinner recipes. You’ve got zucchini noodles for folks who are into pasta, a vegan lentil curry for when you want something creamy and warming, a simple yet highly flavorful tomato and basil soup (kudos to my husband for that recipe!), and a salmon dish featuring parsnip mash for a lower carbohydrate alternative to potatoes. Mmm!
Gluten-free desserts and baked goods
Ok guys, these brownies are LEGIT! I didn’t even set out to make gluten-free brownies–my main goal was to make a lower sugar and lower carb dessert. Enjoy it with a scoop of your favorite ice-cream (I like it with Halo Top vanilla). My almond flour bread recipe is fool proof and if there’s only one recipe that I’d want you to try, it would HANDS DOWN be my almond flour bread! I like making a loaf at the start of the week and using it throughout the week. You can use it to make avocado toast, dip it into my tomato soup (recipe above), and so much more. It’s super, suuuuper easy. Make it!!
Drinks to pair with your gluten-free meals
Last, but not least, it’s imperative to enjoy a drink with your fabulous gluten-free creations! I personally drink a matcha latte almost every morning with breakfast. The watermelon mint juice goes well with everything. I’m constantly shouting at my husband when I make this as he will guzzle the whole glass if I am not looking. It’s that good!! And literally just three ingredients, so fabulously east to make as well.
